Been there done that brother. I learned the hard way. Don't buy incomplete cars. You could have 20 grand into it before its even roadworthy. A complete car you spend a grand and its back on the road almost every time.

You can find a 68 coupe with a 289 cheap pretty much any day of the week. Spend about 5 grand and save yourself the trouble of doing a lot of metal fab is my suggestion.

As far as checking the psi of the oil pump not really. It has an electronic pressure sensor on it. I think it is near the bellhousing on the back of the motor on that car. Check the harness and make sure that it is in good shape. New ones should be pretty cheap. Might be worth just changing...
