UPDATE:

I brought the GT500 back to Evolution Performance and had long tube header, no cats, Billet Aluminum 4lb Lower Balancer Pulley, 80lb injectors, fuel rails, larger radiator and the Shelby heat exchange with spal fans, re-tuned and now the car put down 760 rwhp and 750 rwtq.
