I'm in the process of completely rebuilding my 87. Ground up. The best most logical way of doing what you are describing is rebuilding your existing harness. As long as it isn't missing. If it is ebay or bone yard.
I took my harness and inspected, repaired and recovered in plastic wire-loom.
As far as your engine compartment is concerned if your going with a carb setup its really simple. There isn't a EFI harness to hide and rebuild.
Kinda need more info on car and direction of your project. And skill level with electricity. If you have a couple small issues with an existing harness that you cant get fixed you prolly will not be able to install a harness from painless as they are not a direct fit/replacement.
And as for a harness from Painless call them and they will set you up for the proper options you wish to have in your car. Example power windows, locks, electric fuel pump, etc. But as I said they don't just drop in. You will still have to make the harness.
